Spinach, Red Onion and Cherry Tomato Salad
serves 4

Instructions

  1. Whisk together the vinegar and oil, then add the shallot, tarragon, salt, and pepper. Season to taste.
  2. Dress the spinach, then plate, arrange the tomatoes around the edge, scatter with onions, and garnish with cheese.
  3. Plate and serve chilled.
