Spinach, Red Onion and Cherry Tomato Salad
serves 4
Ingredients
- 3/4 lb spinach, stemmed, cleaned, dried, coarsely chopped
- 1/2 pt cherry tomatoes, quartered
- 1/2 ea red onion, thinly sliced
- 1/3 C rice wine vinegar
- 2/3 C olive oil
- 1 ea shallot, minced
- 1/4 C fresh tarragon, minced
- 4 oz blue cheese
- salt & pepper
Instructions
- Whisk together the vinegar and oil, then add the shallot, tarragon, salt, and pepper. Season to taste.
- Dress the spinach, then plate, arrange the tomatoes around the edge, scatter with onions, and garnish with cheese.
- Plate and serve chilled.
